Maintain your edge
This is a refresher video from the “How to Cut Using a Chef’s Knife”.
Have you ever noticed a butcher constantly honing their knife? This is because they want to maintain a really sharp edge. Remember, honing doesn’t sharpen a knife, it just helps maintain an edge. If your knives loose their edge you will either have to sharpen them on stone or have the professionally sharpened, which for most people is what we suggest as sharpening with a stone takes a lot of time and practice and is not really practical for many home cooks.
Learning how to hone your knife is not that complicated. Start slow with the technique demonstrated in this video. Forming a regular habit of honing will help insure that you maintain a great cutting edge.
