Because avocados from Mexico are available year-round, there’s always fresh inventory for your back-of-house operations.
When the product arrives, ensure your team checks the fruit before accepting it from the vendor. Team members should confirm that the order matches what was requested, including checking both color and firmness for indication of ripeness.
Pick three to five avocados from the case and test the firmness of the fruit to ensure it’s at the correct stage of ripeness. Once you confirm that the order is correct, you’ll need to determine where to properly store your avocados based on when you will need to use them, based on what was presented in Task 20.
