Roasting vegetables without oil is not a super common practice despite the fact that many (not all) healthcare professionals suggest limiting processed oil consumption. The great news is that you can still achieve amazing results using some simple adjustments to classical roasting techniques (with oil). The only slight difference might be that using oil will typically achieve a darker color. When roasting without oil and using a liquid, the vegetables tend to steam a bit more. Does this really matter? You’ll just have to try for your yourself and see.
We’ve posted a recipe link in the tip. Your assignment is to recreate that dish omitting the oil and substituting in a flavorful liquid like vegetable stock. After tossing the vegetables, remember to lift them out of the bowl so the excess liquid is not transferred to the tray to minimize steaming.
