Anko (Sweet Adzuki Bean Paste)

This sweetened adzuki bean puree is the usual filing for daifuku, a Japanese glutinous rice balls. You’ll learn to cook the beans until tender, then puree and sweeten them to achieve a smooth, shapeable paste.
