Mexican Chorizo

This sausage gets its red color from annatto seed and its complex flavor from cumin, cloves, cinnamon, Mexican oregano and other spices. You’ll grind seasoned pork, mix in vinegar for tang, and have the option to stuff casings or keep it as bulk sausage for tacos and scrambled eggs.
