Scallops in Cream Sauce with Spinach

This is a very classic recipe. Notice that the spinach is first sautéed while still wet from washing, in the skillet, until it has wilted and most of the water has evaporated. Add a dash of salt and oil to the spinach and then it is arranged on a plate as a base for the scallops. The rest of the ingredients are added to the pan, with the scallops coming last.
