Grilled Swordfish with Olives, Tomatoes and Zucchini

Swordfish is a firm fish that holds up well for grilling and is great in summer when served with the golden brown, marked-side up, garnished with a mix of olives, tomatoes, and zucchini. You’ll practice creating crosshatch grill marks and using a metal bowl to steam the fish through while keeping it moist.
