Jai (Monks’ Stew or Buddha’s Delight)

Jai—also called lo han jai, monks’ stew, or Buddha’s delight—is a Chinese vegetarian dish traditionally eaten by Buddhist monks. It is commonly seen on Chinese restaurant menus as a great meat-free option. It’s especially popular on the first day of the Lunar New Year. Tradition has it that one should eat a vegetarian diet to start the year off pure. Furthermore, many of the ingredients used in this dish symbolize good luck, and it is thought to bring luck to those who eat it. This version includes dried mushrooms, dates, lily buds, and other ingredients that are soaked in water to rehydrate. The soaking liquid is then used as the basis of the sauce, which is seasoned with soy sauce, garlic, ginger, and turmeric. This vegetarian stew is full of nutrition and flavor.
