Japanese-Style Katsu Curried Vegetables

Hearty vegetables such as potatoes, carrots, yams, and/or taro roots are simmered in a delicious katsu curry sauce, which is made with a base of coconut milk, fried onions, curry powder, garam masala, garlic, ginger, soy sauce, and maple syrup. Katsu is technically a crispy fried panko-breaded cutlet of some sort served with a curry sauce but we love this sauce so much that we make it in big batches and pair it with either tofu and/or veggies.
