The Swich guide to healthier holiday cookies (3 recipes)

Get out your mixing bowls because it’s officially cookie season! One of our favorite parts of the holiday season is the delicious treats. No matter what you celebrate, Christmas, Kwanzaa, Hannukah (all of the above… or none of the above), there’s something about the winter weather that makes cookies extra irresistible. 

The good news is there are so many delicious baking recipes that still give you all the YUM with exclusively plant-based ingredients. We compiled three of our top plant-based cookie recipes below. Bonus: pair these with your favorite nut milk and you’ll transport your tastebuds to the ultimate “happy place.” 

What makes these cookies healthy(ish)?

While so many cookie recipes are packed with multiple cups of sugar, eggs, and bars of butter, these recipes are made with all plant-based ingredients. We also made an effort to make the recipes yummy but not too sweet. For example, the brownie cookies are sweetened with dates and vanilla extract, and the peanut butter cookies use only ½ cup of dark chocolate chips.  

1. Shortbread Cookies

Hello, golden-brown deliciousness. These delicate shortbread cookies are made with plant-based butter, sugar, and flour. We also like to add brown sugar for a bit of extra depth. (Our choice for plant-based butter: Miyokos Butter.)

2. Chocolate Brownie Cookies

One taste of these cookies and you'll be shocked there's no added sugar! This recipe is made with dates, cocoa powder, and, of course, chocolate. They’re super moist and full of chocolatey goodness. Plus, they’re easy to make in a pinch.

3. Cassava Flour Peanut Butter Chocolate Chip Cookies

These delicious plant-based cookies also happen to be grain and gluten-free. They’re made with cassava flour instead of regular all-purpose flour. Pro tip: underbake them a bit for a chewier cookie. Also, be sure to let them cool completely on the baking tray before transferring them — they tend to crumble when they are still warm.
